Oh no,it turned out that Russian cutlets are no American cutlets. The awful word for them is burger! No way am I going to refer to my Granny’s tastiest kotlety as burgers!
The secret of tasty cutlets!
The secret of tasty cutlets is actually the meat. You absolutely have to do minced meat yourself. You’d better take two kinds of meat, for example pork and beef. And don’t forget to add onion! Then you’ll probably end up with heavenly delicious cutlets, just like my Granny cooks! OK, I don’t really believe anybody can cook cutlets that well, but anyway yours will be good.
My variant is for those who do not have time to prepare minced meat themselves. What you do is you go to the supermarket and buy minced meat there. Soak white bread in milk. Then add the soaked bread, an egg and chopped onion to the meat. Knead. Salt and pepper.
Spread flour on the kitchen board. Form meat balls, roll them in flour. Pat slightly with the flat of the knife to shape cutlets.
Fry till brown on each side in preheated oil.
Well, it is OK. Not the way my Granny has, but just OK for a dinner.
Vegetarian pasta
At work we had a canteen, where the most decent food you could get was different kinds of pasta and pancakes. So today I tried to reproduce the pasta I particularly liked.
Dice onion, carrot, eggplant and tomatoes. Heat olive oil and fry onion and carrot till onion is golden brown. Then add eggplant, salt, fry till eggplant gets tender. Add tomato, olives, season and cover with a lid. Simmer till tomatoes give off juice. Also you can add a dash of wine when frying the vegetables.
Serve hot on pasta with grated cheese)))
Canned fish salad
If by chance you have so much homework to do that you hardly find time to sleep, you still sometimes feel hungry. But you don’t want to lose the precious time. So here is my suggestion of how to make dinner in 10 minutes)))) (I’ve noticed that all my ideas are something like this. I’m looking forward to having enough free time to shock you with some masterpiece of haute cuisine!)
Anyway, today I cooked canned fish salad. Not much to describe. You need canned fish (I used tuna), rice (I had the leftovers in the fridge – salad is always a great way to clean the fridge), eggs, onion, canned sweet corn. Chop eggs and onion, mix with fish, rice, sweet corn. Dress with mayonnaise, pepper and salt if necessary.I served with garlic toasts (chopped garlic, fried it for a minute in preheated oil, then fried bread slices until golden brown on each side).
Tasty dinner))) And quick!
Chicken stew- for those who are truly hungry!
I am convinced that the colder it is the more food we need to keep ourselves warm!)) The one we cooked for dinner is definitely high in calories to sustain you during the coldest days!
Th chicken stew is definitely not exquisite haute cuisine. However, many people say that simple home-made food is even more delicious than a microscope portion of something fabulously expensive from a luxurious restaurant. So today’s chicken stew is not vanity fair but a REAL TASTY food)))
The secret to get juicy stew is to use the right cookware. It should be thick bottomed! We use Kazan- a large iron cooking pot used in Central Asia.
You dice onion and mushrooms. Heat the oil in a sauce pan, place the onion and the mushrooms in the pan. When the onion is golden brown, add chicken thighs and fry for 3 minutes on both sides. Then you place sliced potato and tomato. Salt, pepper, any seasonings you like, also we add tomato paste for color. Reduce heat, cover with lead and simmer till the potato is tender. The odor is mouth watering!!!!
Autumn stuffed apples
On such autumn days like this when the rain goes on and off and the rays of sun are scarce it is high time to envelope myself in a warm blanket and spend the whole day with a favourite book. And of course it is time for cups and cups of hot tea with lots of different tasty things…
Stuffed apples is for me a truly autumn dish. It is difficult to explain why…Just the odor of baked apples reminds me of this season.
Stuffed apples is a dish that you can effortlessly reinvent every time. It depends on your taste, mood and the ingredients you have at home.
The easiest variant is just to cut off the top of the apple and sprinkle it with sugar. Then bake for 15 minutes.
This time I cut off the top of apples, scooped out the middle part of the apple and filled it with honey, raisin and nuts. Then baked and enjoyed with a cup of hot tea.
It is also tasty to stuff apples with berries, like blueberry.
Another idea is to use pears instead. I cut the fruit in two parts, then soak in white wine with sugar. I stuff pears with almonds and bake. It is truly delicious!
Is grapefruit good or evil?
Our professor mentioned today in class that grapefruit can lead to breast cancer in women over 45… So straight after the class I went to the shop and bought two ripe grapefruits just to make up for their possible exclusion from my diet in the future)))
After I had my grapefruit I decided it is time to carry out some research into the problem. This is what I actually found:
The first time the potential between breast cancer and grapefruit was mentioned in 2007 in the British Journal of Cancer. 50 000 postmenopausal women were studied at the University of Hawaii and the researchers did arrive at the conclusion that grapefruit intake can increase the risk of breast cancer by 30%.
However, later there was a finding from scientists at Harvard who drew on the data from the Nurses’ Health Study of 1976. The experiment followed a large group of nurses for 20 years and the scientists did not get any evidence that grapefruit consumption can cause cancer!
In 2009 there was “European Prospective Investigation into Cancer and Nutrition”. The experiment studied over 110 000 women (!!!), 59% of whom ate grapefruit on daily basis. The women were followed for 9,5 years on average. The researchers arrived at the conclusion that there is no link whatsoever between cancer and grapefruit!
Another issue about grapefruit is that they contain furanocoumarins, the chemical compound that can affect metabolism of certain medication, which is bad… But I also read about the research of oncologists at Chicago University who found out that the efficiency of anti-cancer drug taken with a meal increases bioavailability of the drug by 167 %!!! What is more, topping of the meal with grapefruit juice will increase the efficiency of the drug even more!
Considering that grapefruit is also believed to be a natural detox and a great source of vitamin C, it is really difficult now to label the fruit as good or evil!
Well, a complicated picture… Definitely more research needed…
